RECIPE - Amazing Black Bean Brownies

Don’t let the words “Black Bean” scare you off…this recipe is AMAZING!

These are the best brownies I’ve made in a very long time and they even went over like gangbusters at a party recently. They’re 100% party guest approved. A member inside Your Beautiful Life (they’re always 1st to see new recipes) said that it’s also 100% kid approved :).

They’re also a great solution for stress-induced sugar cravings. They’re sweet but without any refined sugar. And, they’re high in B Vitamins (from black beans) and Magnesium (from cocoa), and these are very important stress-bustin’ nutrients.

Black Bean Brownies

Ingredients

  • 1 1/2 cups black beans (1 15-oz can, drained and rinsed very well)

  • 2 tbsp cocoa powder

  • 1/2 cup quick oats

  • 1/4 tsp salt

  • 1/3 - 1/2 cup pure maple syrup (depending on your sweet tooth)

  • 1/4 cup coconut oil or butter (coconut oil will leave a mild but pleasant coconut flavour, use butter or sesame oil* if you’d like them not coconut-y)

  • 2 tsp pure vanilla extract

  • 1/2 tsp baking powder

  • 1/2 cup to 2/3 cup chocolate chips (also depending on your sweet tooth)

optional: more chips sprinkled on top

Note for sesame oil - use the mild flavoured untoasted oil. Toasted sesame oil would leave an unpleasant taste.

Directions

  1. Preheat oven to 350 F.

  2. Combine all ingredients, except chips, in a food processor and blend until completely smooth. It takes a few minutes of blending. The batter should be almost as smooth as icing.

  3. Stir in the chips, then pour into a greased 8×8 pan. Optional: sprinkle extra chocolate chips over the top.

  4. Cook the black bean brownies 15-18 minutes, let cool at least 10 minutes before cutting.
