This recipe is SO good it’s hard to believe it’s super healthy!
Cauliflower hasn’t always been my favourite vegetable. Actually I generally don’t like it very much.
Well…until now.
This is the only time I’ve EASILY eaten 1/2 a head of cauliflower and still wanted more. AND, it gives you a full medicinal dose of turmeric (1/2 - 1 tsp) per serving.
That means it’s SUPER yummy and SUPER anti-inflammatory. And it’s even good for your liver :)

And, because I’m a fly-by-the-seat-of-my-pant kind of cook, I’ve had to repeat this recipe many times just to make sure I had the measurements correct. Oh darn ;).
This recipe takes no time to put together and only about 25 mins in the oven. I love fast and healthy meals!
Roasted Curry Cauliflower
Ingredients
1 head of cauliflower
1/4 cup of olive oil
1 - 2 tsp turmeric (I use 2 tsp, but it can be intense…maybe try 1 tsp to start :)
2 tsp curry powder (I use a mild one…but a spicy one would be good too :)
1/4 tsp garlic powder
1/2 - 1 tsp sea salt (adjust for your salt cravings)
black pepper, to taste
Directions
Preheat your oven to 400F.
In a large bowl, whisk together the olive oil, turmeric, curry powder, garlic powder, sea salt, and pepper.
Once it’s thoroughly combined, cut the cauliflower into (large) florets and place into the bowl.
Using a rubber spatula, coat the cauliflower with the spicy oil. Be sure to keep scraping the bottom of the bowl to get all of the flavour onto the cauliflower.
Place the cauliflower onto a cookie sheet, and dribble any remaining spicy oil onto the cauliflower.
Put into the oven for 25 mins, flipping half way through cook time.
It will come out crispy and tender…and soooooo goooood <3
